Sambals to accompany Cape Curry

Cucumber Sambal,
Tomato and Banana Sambal and
Onion Sambal

 Cucumber Sambal
175 ml natural yoghurt
Pinch of salt
1 T (15ml) chopped mint
1 cucumber, grated, salted and drained in colander
1 green pepper, diced
1 small onion, chopped
Cayenne pepper

Mix all ingredients together, add a sprinkling of caynne pepper

Tomato and Banana sambal
3 Tomatoes, skinned and finely chopped
3 Bananas, sliced
1 T (15 ml) lemon juice of wine vinegar
1 chilli, finely chopped or ½ t (2,5ml) chilli powder
Pinch of salt
½ t (2,5ml) Worcester sauce
Sprinkling of lemon pepper

Mix all the ingredients.

Onion sambal
2 large onions, sliced
2 chillis, finely chopped
2 T (30ml) vinegar
Pinch of salt
1 T (15ml) chopped coriander leaves or parsley

Mix all the ingredients
